2 lb tomatillos, husked, washed and halved

3 cloves garlic peeled.

 

Broil for 7 min, turning garlic once.

 

Dice garlic

2 habaneros with pith and seeds removed, diced.

 

Puree, then stew this mixture, stirring occasionally, until sauce is reduced.

 

Add

Juice of 1/2 lime

Red Pepper, diced,

Green Pasilla Pepper, diced

1/2 red onion, diced

1/4 to 1/2 cup chopped cilantro

 

Add salt and vinegar to taste (more lime to taste also)

 

To try -- it would be more colorful with something orange.

Add or substitute some of the pepper with orange bell pepper?

Leave seeds of one pepper in for more heat?
