Combine

  • half a jicama, julienned small (not necessarily matchsticks, but close),
  • (two good double handfuls spinach (torn if in big leaves, whole if it's baby spinach),
  • one can (16 oz.) mandarin orange segments, mostly drained, and
  • two scallions, chopped.

 

Toss. Sprinkle with

  • a splash of red wine vinegar (maybe 3 tablespoons?),
  • half to one teaspoon poppy seeds,
  • a bit of paprika (that is to say, a dash, but make it a good dash).

 

Toss it again if you'd like.
