Combine
- half a jicama, julienned small (not necessarily matchsticks, but close),
- (two good double handfuls spinach (torn if in big leaves, whole if it's baby spinach),
- one can (16 oz.) mandarin orange segments, mostly drained, and
- two scallions, chopped.
Toss. Sprinkle with
- a splash of red wine vinegar (maybe 3 tablespoons?),
- half to one teaspoon poppy seeds,
- a bit of paprika (that is to say, a dash, but make it a good dash).
Toss it again if you'd like.
