Peel and chunk
boil until quite soft, and mash. Mix in
and then commence to add
- about four pounds of white sugar,
gradually, until a thick paste forms that stops sticking to the bowl and spoon.
At this point, divide it into batches and flavor each with whatever extracts you please (mint or orange oil, for example). Form the centers of the candies and refrigerate them. (If you're a geek, take note that the shape of the candies will affect the ratio of chocolate to filling.) As they cool, they'll get firmer, and you can touch up the shaping if needed. Once they are cold through, dip them in melted chocolate (or compound coating, whatever) and cool on waxed paper.
The filling is quite sweet, so I would recommend bittersweet chocolate over milk chocolate. Melting chocolate is reputed to be a tricky business, but heat it in a double boiler, over hot water, and don't turn the gas up too high below. Also, don't let any water get into the chocolate. You should be fine.
Maybe this is more of a TreatRecipe than a DessertRecipe. Whatever.
