The Jepsens' Gourmet Potato Soup

 

This recipe came to me from a senior missionary couple.

 

Ingredients

 

  • 1 onion, chopped
  • 3 T butter
  • 3 T flour
  • 2 c milk
  • 3 c chicken broth
  • 2 c chopped potatoes
  • Seasonings: 1-2 t Worcestershire, 2 T chopped green stuff (parsley, onion tops), 1 T lemon juice, salt, pepper.
  • Garnish: sour cream or grated cheese.

 

Sauté onions in the butter till they are soft, but not brown (low heat!). Add flour and let it brown a little to make a roux. Then add the liquids. Don't boil it, because the milk won't be happy, but get it hot and simmer 30 min (test a potato for tenderness). Add the seasonings and garnish. Oh, and if you increase the Worcestershire (which is good) decrease the lemon some or it may curdle the milk.
