I'm not gonna tell you how to make these, because you know. But let me offer some tips and suggest things to do with them.
- Wash the starch off after you cut them.
- Consider pre-cooking in the microwave so you can get that mealy center with the crisper outside.
- Consider adding some rosemary and maybe a clove of garlic to the dish when you nuke them. (To do: Retrieve and post the excellent rosemary-fried-potato instructions of Tai Li Andersen.)
