Maybe this belongs among the SideRecipes or maybe the SaladRecipes — who knows? Anyway, it's just a step more refined than ordinary egg salad.
Ingredients
- Hard-boiled egg(s), chopped
- Cucumber, in equal volume to egg, 1 cm dice
- Cougar Gold (or other sharp cheddar), half to two-thirds that volume, crumbled
- Good mayonnaise, volume of egg or a little more. Fold all together.
- MoroccanStylePreservedLemon rind, one eighth (or more?) the volume of the egg, minced
- Coriander seeds, slightly less than volume of lemon, crushed
- Salt, black pepper, paprika, etc. lightly applied. Fold all together again.
The lemon rind has a tendency to stick together when added, and it's hard to see when it has mixed in. Dry coriander seeds have a tendency to roll around instead of crushing. Two birds, one stone: Mince the lemon, drop the coriander on top of it, crush it there, drop it all on the salad, and mix. When the coriander is distributed evenly, so is the lemon.
Very tasty on whole wheat toast.
